Perth butchers find quality at Woolorama

BACK to purchase the finest cuts of meat at Wagin Woolorama trade cattle sale were Meat the Butcher owners Glen and Louise Fuchsbichler, when they brought the heavyweight champion and mediumweight grand champion winning steers for the second consecutive year.

After a heated bidding war Glen's father, Wayne Fuchsbichler, secured the heavyweight champion prime steer from Alastair and Jenny Murray, Tullibardine Murray Grey stud, Albany, for a top price of $2450.

The family also took back to their shop at Dog Swamp Shopping Centre, Yokine, the mediumweight grand champion, a Gelbvieh-Red Angus-Murray Grey cross steer from the Pugh family, Summit Gelbvieh stud, Narrikup, for the second top price of $2040.

Glen said last year the quality cuts of meat the steers produced were of a very high standard so he thought why not purchase this quality again.

"There is quality meat at wholesalers but we are guaranteed quality beef when we buy at the Wagin Woolorama," he said.

"We try to purchase only the highest quality produce for our customers."

Glen said his father knows what he is looking for in the steers and he trusts him on his judgement.

"I am hoping to support other agricultural shows throughout the State, but getting the time to go out as well as operate the shop is the hard bit," he said.

"The yield on the beef was very good this year.

"It had nice fat covering, not too much and not too little, while the colour was great as well."

This year Glen and his five full-time employees decided to hang the carcases longer, for eight days in total.

Glen said the meat is still aging but will be ready to sell at the end of the week.

"Anybody who purchases the prime cuts from the steers will be notified on what they are buying so they can compare it to the standard cuts we sell," Glen said.

"Although it costs the business more there is no extra charge made for the high quality cuts off the champion steers.

"We simply use the meat as a promotion week and allow our customers to enjoy top quality meat at a reasonable price."

Glen urges customers who want to buy the quality cuts of meat from the champion steers to come to the shop this Friday and Saturday to ensure they get their portion.
